So, leave it to me to wait until...dinner time to post a breakfast recipe :). Our internet has been down due to Hurricane Isaac and we're JuuuuST getting it back! (Some people are STILL waiting for lights, a full week later!).... Besides, with two under 3...time to sit and type is a rare luxury :).
Anywho, we had the most delicious breakfast today so I thought I'd share! Yummy peanut butter pancakes with warmed strawberry preserves... 
Peanut Butter Pancakes
1 1/2 c almond milk (regular is fine too)
2 eggs
3 Tbsp melted butter
2 heaping Tbsp peanut butter
1/2 c whole wheat flour
1 c unbleached all purpose flour
1 tsp salt
2 tsp baking powder

- Melt butter and peanut butter in a small saucepan over medium heat. In a separate bowl, beat eggs and milk together. Stir in butter mixture. Whisk in dry ingredients let rest 15 minutes. Lightly grease gridle or skillet. Pour 1/3 c sized rounds of batter. Cook 2-3 minutes per side or to desired doneness

To Top- heat your favorite preserves, jams, or jellies over medium heat, til lose and liquidy(?) :)...pour over pancakes and ENJOY! 
p.s. I also tried topping mine with crushed honey glazed peanuts AND strawberry preserves... fantastic!
