Good morning lovelies ;) Here's a delicious spin on oatmeal even the oatmeal haters will love. I know because neither me nor my husband is a fan of cooked oatmeal but we both love this bake. You can add any mix-ins you like. Today I added raw pumpkin seeds and diced apples. Let me know what you try and how it comes out. :) Keep reading for the recipe!

Ingredients:
1 cup uncooked quick oatmeal, not instant
1 cup flour ( I used whole wheat)
1 cup packed brown sugar
1 Tbsp cinnamon
1 tsp nutmeg
1 tsp salt
1 cup milk ( I used almond/coconut)
1/2 cup oil
1 egg (optional)
1 apple, peeled and diced
1/2 cup raw pumpkin seeds
1 Tbsp powdered sugar for dusting(optional)

Directions: Preheat oven to 400 degrees. Whisk together all dry ingredients, including sugar. In a separate bowl, whisk together wet ingredients. If you want a spongy consistency (think bread) add 1 egg to the mixture, for an oatmeal bar consistency forget the egg. Add wet ingredients to dry ingredients and mix until well incorporated. Add whatever mix-ins you like. I will list some that I have tried further down.  Pour mixture into a greased 9x9 baking dish or whatever baking dish you have on hand. Bake at 400 for 20-25 minutes, until top is golden and crisp. To retain a moist consistency you can cover the dish with foil until the last 7-10 minutes of baking, remove foil and allow the top to crisp. Remove from the oven and dust with powdered sugar. Let cool for 3-5 minutes. Serve and Enjoy! ;)

Some different mix-in varieties I have tried are: peaches and walnuts, blackberries and pecans, nectarine/blackberry and pecan. I have loved them all! My husband's favorite so far is the peach. Try this out with whatever fruits you have on hand and tell me what you think.
