So I'm a bit of a snob when it comes to pie crust. Not a snob-snob but like a "geez it's not that hard to make from scratch, what is this 'store bought' crap" snob.... so maybe that is a snob snob but so what. When you see how quick and easy this recipe is, I hope you'll understand. But hey, if you enjoy the taste of cardboard coupled with beautiful and delicious pie...by all means, do ya thing. :) However, if a light, crisp, buttery crust that can be easily prepped, stored and even frozen appeals to you, here it is ;)

  • 1 1/2 C unbleached all purpose flour
  • 2 Tbsp sugar
  • 1/8 tsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp cream cheese (room temp)
  • 4 Tbsp frozen butter
  • 1/4 C vegetable oil
  • 2 Tbsp milk
Whisk the first four ingredients together until well incorporated. Cut cream cheese and frozen butter into the dry mixture with a fork, pastry blender or your hands until it all resembles coarse crumbles. An easy way to add frozen butter to a dry mixture is to grate it in with a clean cheese grater. in a small bowl, whisk the oil and milk together. Add to the flour mixture and mix until dough just comes together but is still crumbly. If you are preparing a pie immediately, press the dough into your pie dish, spread evenly all around. If not, you can store it in the fridge for 3-4 days and in the freezer indefinitely. This dough can be used for sweet or savory pies. Enjoy :)
