There are so many dishes I "can't eat" without cornbread. I mean, I'm sure could eat them but they just don't feel complete without some homemade, box-free, sweet cornbread. It's so easy to make you wouldn't believe it, and considering the sometimes unclean ingredients included in box mixes, it's definitely a healthier option. My kids would eat a whole pan of this recipe if I let them and my grandmother has put her "stamp" on it too! :)
Now be warned, I like my cornbread sweet, almost cake-like, so if that's not your taste, feel free to change it up to your liking. :)

Here's what you'll need:
- a prepared pan/dish (lightly greased with butter or oil)
- an oven, preheated to 400 degrees (lol! Capt. Obvious) 

Ingredients:
-1 1/4 cup unbleached flour
-3/4 cup cornmeal
-1 1/2 tsp baking powder
-1/3 cup packed brown sugar
-3 Tbsp honey or cane syrup
-1 egg beaten
-1 cup of milk
-1/4 cup of vegetable oil

Directions: Mix first four ingredients with a whisk or fork until well blended. To save on dishes, I make a well in the dry stuff and add the wet stuff. You can also use a separate bowl. Do what is easiest for you. Mix all ingredients together until everything is well incorporated. Pour bread batter into your prepared dish and put it in the oven. Bake for about 25 minutes or until the top cracks :)

Ya'll already know how well cornbread goes with greens, beans, cabbage and more. This is also a great base bread for dressings and mush mush for my country folks. ;) N'Joy!!!
