Tasty Tuesday has made its way back around and I'm glad because after cooking this for dinner last night, I HAD to share! It was soooo good I'm making more for lunch! :)
Don't let the title fool you, it's a quick and easy dish....and while "stewed fish" isn't typical to the American diet, the flavors alone will have you craving an island vacation.
 Normally, whole or fresh caught fish is used but I had tilapia so that's what I used and it was still on point!

Here's the recipe...

Active Prep Time: 10 minutes
Inactive: 30 minutes
Cook Time:7-10 minutes

Ingredients:
- 2-3 lbs fish
-1/4 of a green bell pepper (julienne sliced-thin strips)
-1/4 of a red bell pepper (julienne sliced-thin strips)
-1 whole medium onion (julienne sliced/or rough chopped)
-4 cloves garlic, diced
-1 cup grape tomatoes chopped
-2 Tbsp soy sauce
-1 Tbsp ketchup
-1 tsp fresh grated or ground ginger
-1 sprig fresh thyme or 1 1/2 tsp dried thyme
-1/4 tsp habanero pepper sauce
-1 Tbsp curry powder
-1/2 cup al purpose flour
-1 cup oil
-salt & white pepper to taste
- 4 cups cooked brown rice

Directions: Place all ingredients, except flour, oil, and rice in a Ziploc bag or covered bowl. Mix well, be careful with lighter fish so it doesn't come apart. I cut the fish in half for easier handling. Let fish and other ingredients marinate for 30 minutes. You can go a little longer but not too long, fish absorbs flavor pretty quickly. (Towards the end of marinating time, heat your oil in a shallow pan or skillet) Remove fish from marinade vegetables and juices(DO NOT DISCARD), shake it off lightly and dip in flour. Fry for 1-2 minutes per side in hot oil. (I include this step to help the fish stay together while it's stewing) Remove from oil and drain on paper towels. Add fish, marinating veggies/juices, and about 2 cups of water to your cooking pan (not the frying one). Bring to a boil, cover and reduce heat to medium high. Let it all cook down for about 7-8 minutes, until fish is done and gravy is slightly thickened. Serve over brown rice with some fresh, hot roti & you're good to go!
